I'm looking for something that's very high calorie and easy to prepare... and obviously gluten free.. maybe some kind of shake / smoothie..
Oats are off limits.. they can trigger the immune response in some celiacs..
Dairy is maybe.. since your gut is damaged it can be like having loctose intolerance until it heals.. there's also cases of dairy causing immune response in some celiacs..
