Questions for diet changes

So I decided back in November December to start changing my diet. I wasn't feeling good, lack of energy the whole nine. Since then I've gone from 4500 to 8000 calories a day to at most 1500 with once in a while bad foods like corn dogs and such. The issue I am having now actually multiple issues, ranging from carb high sick (where your blood sugar spikes really high really fast and makes you sick to the gut) to even having worse energy levels and instead of losing some weight I have gained 15 pounds. So do you guys have any recommendations for dealing with this? I'm on a budget with IBS, borderline pre diabetic (like normal a1c but I'm like 2 points from being prediabetic), and as a result of the IBS have issues processing food at times which creates blood sugar issues and deficiency issues.
